Chicken Rezala | Chicken Korma

"Chicken Rezala" - does the name sound royal?? Not only the name, this authentic Bengali originated Chicken dish is a Mughai rooted royal Cuisine, locally known as "Chicken Korma" too.

The texture is semi-gravy which goes well with any varieties of rice or roti and is whitish in color. The taste is balanced with respect to sweet, sour and spice.


The chicken thighs and drumsticks, cooked in a paste of rich ingredients makes the pieces tender and juicy, also lifts up the flavor and comes out unique in taste. 


Sharing here is the recipe of "Chicken Rezala". Try it once and Once is never enough for this finger-licking recipe.



 Ingredients :
  • 1/2 kg Chicken 
  • Salt 
  • 1 tbsp Ginger Garlic Paste 
  • 3 tbsp Curd - beaten well 
  • 1/2 tsp Black Pepper Powder 
  • 2 Onion - roughly chopped 
  • 1 Onion - cut into rings  
  • 2 Green Chillies 
  • 1 tbsp Poppy Seeds (Posto) 
  • 1 tsp Sesame Seeds 
  • 8-10 Cashews 
  • 2 Bayleaf 
  • 1 inch Cinnamon Stick 
  • 2 Cardamoms 
  • 3-4 Cloves 
  • 1 tsp Black Pepper Corn 
  • 3 Red Chilly 
  • 1 tsp Sugar 
  • 1/2 tsp Garam Masala Powder 
  • 1.5 tbsp Ghee 
  • 2 tbsp Refined Oil 
  • 1.5 cup Water

Recipe Details : 

✓ Wash the chicken pieces and clean well. Marinate the chicken with 1 tsp salt, half of ginger garlic paste, 1 tbsp curd, black pepper powder and 1 tbsp oil.  



✓ Mix and coat well and keep in refrigerator for around 2-3 hours or overnight for best results.



✓ Next, Let's make a paste for the Rezala Gravy which is the most important part of this recipe.

✓ In a blender, take 1 tbsp Ginger Garlic Paste, roughly chopped onions, poppy seeds, sesame seeds, cashew nuts and green chillies. Add 1/4 cup of water and make a thick and smooth paste of it. 




✓ Heat a kadai. Add 1 tbsp ghee and 1 tbsp Oil.

✓ Add Bayleaf, cinnamon, cardamom, cloves, black pepper Corn and red chilly. Fry for few seconds.




✓ Now to the Kadai, add the blended paste prepared in step 3. Mix everything well. 



✓ Add a little water, keeping the flame in low medium, cover and cook it for around 7-8 mins.

✓ Add rest of the 2 tbsp curd now. Mix again and cook for 1-2 mins.  


✓ Add sugar and salt as per taste, remember salt is already added during chicken Marination. Mix everything nicely.


✓ To the kadai now, add the marinated chicken and mix well with the gravy. 



✓ Keep Stirring and cook for around 5 mins in high flame.


✓ Now add 1 cup water and let it come to boil. 




✓ Cook the Chicken for around 10 mins in medium flame. Keep stirring in between. 

✓ Now add the Onion rings. Cover and cook in medium flame for around 5 mins more. 




✓ After 5 mins open the lid and adjust salt, sugar and the gravy consistency as per your need.

✓ Add Garam Masala Powder and Mix again.




✓ In the final step, add 1 tsp Ghee. Mix and switch off the flame.

✓ Keep the kadai covered for around 5 mins for the gravy to get thickened up.


✓ Chicken Rezala is ready to serve hot with any kind of roti varities.

    Some hot naan and that curry would taste so heavenly.
