Pepper Mutton Fry in Pressure Cooker

After few experiments, I got the perfect recipe of Pepper Mutton, which I am sharing with you all today. I am sure you would love it.



 Ingredients :
  • 500gm Mutton - cut into small pieces 
  • 2 Onion - thinly Sliced 
  • 1 tbsp Ginger Garlic Paste 
  • 1 Medium Tomato - Chopped 
  • Salt 
  • 2 tbsp Pepper Powder (as per your spice tolerance) 
  • 1 tsp Turmeric Powder 
  • 1 tbsp Red Chilly Powder 
  • A pinch of Baking Soda (this makes the mutton tender)
  • 2 Green Chilly - slit 
  • 1 tbsp Garam Masala 
  • 6-8 cloves 
  • 1 Bay leaf 
  • 2 twigs of Curry Leaves 
  • One small lump of Tamarind paste (for the ting flavor) 
  • 1/2 tsp Sugar 
  • 4 tbsp Coconut Oil (Pepper Mutton tastes best with coconut oil, mustard Oil also can be used) 
  • 1 tbsp of Ghee


Recipe Details : 

✓ Wash and clean the Mutton well.


 ✓ Let's start with Mutton Marination. Add 1 tbsp Salt, 1/2 tsp Turmeric Powder, 1/2 tsp Red Chilly Powder, 1 tbsp Pepper Powder, baking soda and 1 tbsp Oil. Mix well and keep it aside, covered for around 15-30 mins.


✓ In a pressure cooker, heat oil. Add 1/2 tsp Pepper Powder. Add bay leaf, cloves, few curry leaves and the slit Green Chilly. Saute for 1-2 mins in low flame. 


✓ Add Onion and ginger garlic paste. Cook for few mins in low flame until the Onion turns light brown and the rawness of ginger garlic paste is gone. 



✓ Add the tomatoes. Take out the whistle of cooker and cook in low flame till tomatoes turn soft and mushy. 

✓ Add 1 tsp salt, 1/2 tsp Turmeric Powder, 1 tbsp Garam Masala, 1/2 tsp Red Chilly Powder. Mix everything well and cook the masala for around 2-3 mins.


✓ After 3 mins, add the marinated Mutton. Mix everything again nicely.  


✓ Cover the lid and cook in medium flame till all the water from mutton evaporates and the raw smell of Mutton is gone.

✓ Open the lid, stir again and cook. Repeat the same process for around 15-20 mins, i.e. cook in low flame for around 15-20 mins by stirring in between.

✓ Cook the mutton like this till it starts turning light brown in color. 

✓ Add the tamarind pulp and Sugar. Also 1/4 cup of water. 

✓ Mix again and cook for around 5-8 mins more till mutton becomes completely dry. Remember that, the more you cook, the mutton will come out at it's best taste. 


✓ Once the Mutton turns nice dark brown in color, add around 1 cup of water, needed for the mutton to cook.

✓ Turn the gas flame high and let the water comes to boil. 

✓ Now close the lid of cooker along with whistle and let the mutton cook in high flame for 3 Whistles.

✓ Turn off the flame and keep the cooker as is, till it leaves all the gas.

✓ Open the lid and adjust the gravy consistency as per your choice. If you like a little masala gravy, it's done at this stage. But, if you like the mutton dry same as me, Cook the mutton in high flame for 2-3 mins more, keeping the lid open.

✓ At a last step, add ghee and the remaining 1/2 tbsp Pepper Powder. Give it a very good mix and Mutton Pepper fry is ready to serve hot.

✓ This goes well with any varieties of rice and roti.
