Today's recipe from Panda's Kitchen is "Bhapa Rui", an authentic Bengali recipe, where the fish is Marinated with a paste of Mustard, poppy seeds and curd, which is later steamed.
This recipe tastes best using Hilsa or Ilish fish. As I couldn't get Hilsa, trying the same with Rohu.
Ingredients :
✓ Clean and take the Rohu fish pieces on a plate. Add salt and Turmeric Powder. Mix well and keep aside for around 15 mins.
✓ Heat a pan and add mustard oil to it. place the fish pieces and slightly fry them in medium flame for just 2-3 mins. Note that, this step is entirely optional, if you love the fish a little raw, avoid this step.
✓ Coming now to the blending step. Make a soft and smooth paste of white mustard seeds, black mustard seeds, poppy Seeds and 2-3 green chillies. Add a little water as required.
✓ Transfer the blended mix to a bowl. Add curd, Salt, sugar, red chilly powder and around 2 tbsp Mustard oil. Make a nice paste of it.
✓ Add the slightly fried pieces to this paste. Marinate and keep covered for almost an hour.
✓ Meanwhile Heat water in a steamer.
✓ Transfer the Marinated fish pieces along with marinade to an airtight container. Add some Green chilly to the marinated fish and cover the container tightly.
✓ Place it in a steamer and steam for around 10-15 mins in medium flame.
✓ Switch off the flame and Let the steamer cool down.
