Well rightly said in the commercial that egg is one of the most nutritious food one can have every day and readily available any time any place , but eating only boiled or omelette gets boring with time.
How about adding some twist to it ???
This new recipe "Kerala Style Egg Curry" from my kitchen is a must try!! It goes well with any varieties of Rice or Roti.

Ingredients :
Recipe Details :
✓ Make some random spots on Egg using Fork and Coat them well with a mixture of salt, 1/4 tsp Turmeric Powder and 1/4 tsp Red Chilly Powder.
✓ Heat 1 tsp oil in a kadai. Add the Eggs to it and shallow fry for 2-3 mins in medium flame. Eggs will start becoming light brown in color. Take the eggs out on a plate and keep aside.
✓ Heat 2 tbsp oil in the same Kadai. Add black Jeera and curry leaves. Let it splutter.
✓ Add onion now followed by Green Chillies and ginger garlic paste. Mix everything and cook for 3-4 mins in medium flame until the onion starts becoming light brown.
✓ Add Tomato and stir once. Cover and cook until tomato becomes soft and mushy.
- 3 Eggs - Hard Boiled
- 2 small Onion - Chopped
- 1 tbsp Ginger Garlic Paste
- 2 Green Chilly - slit lengthwise
- 1 Tomato - Chopped
- 8-10 Curry Leaves
- Salt
- 1/4 tsp Black Jeera
- 1/2 tsp Turmeric Powder
- 1 tsp Red Chilly Powder
- 1 tsp Garam Masala Powder
- Coconut Oil preferably to cook (can use Mustard oil in stead)
- 1 cup Water
- Some Chopped Coriander Leaves to garnish
- 1/2 cup Grated Coconut or 12-15 pcs of Coconut
- 7-8 broken Cashew pieces
- 1 tsp Poppy Seeds or Posto

✓ Make a paste of Coconut, cashew and Poppy Seeds by adding some water to it.

✓ Add this paste to Kadai and mix everything again.
✓ Cover and cook for 5 mins in low flame. The mix will be thickened up.
✓ Add 1 cup water now and let it come to boil.
✓ Lower the flame and add the shallow fried eggs to this gravy. Cook everything nicely in low flame for around 10 mins.
✓ Garnish with some chopped Coriander Leaves and serve hot with rice or roti.
