Egg Malai Curry

There's a number of reasons why people love eggs: They're easily available, versatile, packed with good protein and lot of cuisines can be prepared using it. 
Cooking an egg is always an adventure since it involves technique and precision..

Let's Put on aprons, pull out the pans and get cracking!!

Ingredients :
  • 4 Boiled Eggs 
  • 1 Big Onion cut in cubes 
  • 3 Green Chilly 
  • 7-8 Garlic Cloves 
  • 2 inch Ginger 
  • Around 5-6  each almonds and cashews 
  • 3 tbsp oil 
  • 2 tbsp Butter 
  • 1/2 tsp Pepper Powder 
  • 1/2 tsp Cumin Powder 
  • Salt 
  • 200 ml Milk 
  • 1 full tsp Garam Masala 
  • Coriander leaves and Green Chilly- Chopped

Recipe Details :

✓ Take 1 tbsp oil in pan. Once the oil is hot, add cut onions, Green Chilly, Ginger, Garlic Cloves, Almonds and Cashew. Fry it well on medium flame for few mins until the Onion become soft. Keep Stirring in between.

✓ Take it out in a Grinder Jar. Grind it well until it cools down.

✓ In the same kadai, take 2 tbsp oil and 2 tbsp Butter (this give a creamy taste to the dish, you can skip it if more health-consious)

✓ Add the blended paste to the hot oil in kadai, add 2 tbsp water. Mix well and fry it well on medium flame for 3-4 mins until oil separates out.

✓ Now stir the mix again. Add salt, pepper powder and Cumin Powder to it. Mix well and fry for another 2 mins in low flame.

✓ Keeping the flame low, add milk to the kadai and mix well. Now you would have already got the perfect color of Malai Curry.






✓ Add Garam Masala to the gravy and stir well. You can adjust the gravy consistency here as per your need.

✓ Cut the Boiled Eggs into halves and add them to the gravy. Cover the eggs nicely with gravy and keep the kadai on gas for 5 mins more in low flame so that the egg is well cooked in masala and becomes juicy and tasty.

✓ Last step is adding some chopped coriander leaves and finely chopped green chillies

✓ Give a last good mix in such a way that the egg doesn't break. Switch off the flame and serve hot.

✓ It goes very well with any kind of Roti/Rice varieties.
