Ghee Rice in Pressure Cooker

Ghee Rice is one of the most favorite flavored rice as it gives a heavenly taste and feel. The Basmati rice grains cooked in ghee and some dry spices, topped with some fried cashew and raisins... Makes this variety of rice unique. 

Ghee Rice can be prepared in a jiffy and pairing it up with dal or any gravy, is good enough for a party or special meal feel.
 

Sharing here is the recipe. Skip onion if you are preparing on a festival day.


 Ingredients :
  • 1 tbsp Ghee (if you love the ghee flavor, take 1 tbsp more) 
  • 1 cup Basmati rice - soaked for around 30 mins in water and drained 
  • 2 cups Water 
  • 1 Onion - thinly sliced (skip if you are preparing on any festival day) 
  • 2 Green Chilly 
  • 8-10 Cashews 
  • 10-12 Raisins 
  • 1 Bayleaf 
  • 3 cloves 
  • 2 cardamom 
  • 1 Cinnamon Stick 
  • 8-10 Peppercorn 
  • 1 star Anise 
  • Salt 
  • Juice of half Lemon

Recipe Details :
✓ In a pressure Cooker, heat Ghee. Add cashews and raisins. Saute for few secs and take them out.


✓ In the same pressure cooker, add Bayleaf, cloves, cardamom, Cinnamon Stick, Peppercorn and star Anise. Saute for few secs till the aroma starts coming.


✓ Add onion and green chilly.


✓  Mix well and fry till Onion turns light brown in color.


✓ Add soaked and drained Basmati rice to pressure cooker. Fry carefully for 1-2 mins. 


✓ Now add water and keep the gas flame high. let water comes to boil.


✓ Add salt and lime juice (to avoid rice from being sticky). Mix everything well.

✓ Cover the cooker and Cook the rice in high flame till 2 whistles.

✓ Switch off the flame and wait till all gas comes out. 

✓ Open the cover. Add fried cashews and raisins. Mix gently.


✓ Ghee rice is ready, serve hot with some gravy of your choice. My pick would be Butter Chicken or Paneer Makhani or Veg Khurma.
