Chicken Dum Biryani

Chicken Dum Biryani.. The name itself is enough to get saliva in mouth, isn't it?? Biryani is the True Love for any Food-Lover.. The combined aroma of ghee, chicken and dry spices together... The fragrance of fluffy and long grained Basmati Rice... The color of saffron milk along with caramelized Onion.... Makes Chicken Biryani the King of all !!

A potful of Biryani along with Raita is a complete drooling Meal and craved the most among foodies.

I always wanted to prepare chicken Biryani at home so that I can use the best quality ingredients and make it the best so that I don't have to go to restaurant for Biryani. 

But we usually have a notion that Biryani takes too long to prepare and it's difficult enough to try at home.

My search and experiment continued until I reached at this recipe, which is very easy and it'll stop your addiction of Restaurant Biriyani.

Whenever guests are there at home, I have tried this many-a-times and it's loved by everyone. 
Today, I am going to share this super delicious Panda's Style Biryani Recipe with you all..🙂 You can thank me later lol 😉



Ingredients :

For Marinating Chicken :

  • 500gm Chicken pieces 
  • 2 full tbsp Ginger Garlic Paste 
  • Salt 
  • 1 tsp Turmeric Powder 
  • 1 tsp Pepper Powder 
  • 2 tsp Red Chilly Powder 
  • 1 tsp Chicken Masala 
  • 3 full tbsp Biryani Masala (after experimenting few, I ended up using eastern Hyderabadi Biryani Masala) 
  • 1 tbsp Lime Juice 
  • 150gm Curd 
  • 2 Medium Tomato - Chopped (optional if you don't like the sour taste)
  • 2 Green Chilly - finely Chopped 
  • Chopped Mint and Coriander Leaves (optional) 
  • 1 tbsp Ghee

For Biryani :

  • 3 Medium sized Onion - sliced 
  • 500 gm Long-grain Basmati Rice
  • Around 1 ltr Water to cook rice and 2 cups for the Gravy 
  • 3 tbsp oil 
  • Around 8-10 Cloves
  • 4-6 Cardamom
  • 4-6 Cinnamon Sticks
  • 3 Full Star Anise
  • 12-14 Peppercorn
  • 1 tsp Cumin Seeds
  • 4 Bay Leaves
  • Few pieces of Mace
  • 3 Full tbsp Ghee
  • Kesar Mix Milk

Recipe Details :

✓ Take the chicken pieces in a bowl, wash them well. Add all the ingredients listed under marination to the bowl and Mix nicely with hand. Keep the marinated chicken in fridge for 3-4 hours.



✓ Wash the Basmati rice well and Keep them Soaked in water for around 20 mins.


✓ In a Kadai, heat Oil. Fry the sliced onion until they start becoming light brown in color and take out in a plate. Don't over-fry the Onion.


✓ In the same Kadai, add half of all the dry spices listed above. let them get fried for 1-2 mins until the aroma starts coming.


✓ Add the chicken to it and keep cooking in the Medium flame until they become tender.


✓ On the other side, in another vessel,
add water, Boil it. Add 1 tbsp Ghee, 1 tbsp Salt and the rest of the dry spices. Then  Once the water is boiled, add previously washed and Soaked Basmati Rice.


✓ Keep the heat high and cook the rice until 70% cooked along with the dry spices, then take out of gas and drain the water.


✓ In the Kadai where chicken is getting cooked, add 2 cups water and cook the chicken for around 10 mins more in low flame.. This helps to make the Masala for biryani. Please note, don't make the chicken completely dry, let some amount of water be there. As per the Masala requirement, keep the water in chicken.

✓ At this stage you can add some dry fruits of your choice, if you want. (I usually don't prefer dry fruits in Biryani)

✓ Now take the kadai out of gas.  Place a Tawa on gas and let that be heated up.

✓ Meanwhile, spread half of the cooked rice on chicken and then add some fried onions, kesar mix milk and 1 spoon ghee. Again another layer of rice and on top the same
fried onions, kesar mix milk and 1 spoon ghee (if there's more rice, add in multi-layers)



✓ Cover the Kadai and seal with Atta dough. Then place the Kadai on top of Tawa and cook for a final time with Rice and Chicken together in a low flame for 10 mins.

 âœ“ Chicken Dum Biryani is ready to grasp now..😋😋😋 While serving, try to take out from one side using a spatula. Don't break and mix the chicken and rice completely.
