Among all parathas, Aloo-paratha is a winner of all the time.
Imagine a winter Morning to start with Hot-piping soft aloo-parathas with a dollop of white butter on it... This very common Punjabi Special can be served at any meal and loved by everyone.

Ingredients :
For the whole-wheat Paratha :
- 1 and half cups whole wheat flour
- 1/2 tsp salt
- Warm Water for kneading
For the Stuffing :
- 4 medium potatoes, boiled, peeled, and mashed so there are no lumps, please don't over boil the Potatoes
- 2 Big onions, finely chopped
- 1 tbsp oil
- 1 tsp cumin seed
- 2 big finely chopped green chilly
- 1/2 tsp red chili powder
- 1 tsp chaat masala
- 1/2 tsp garam masala (optional)
- 1/2 tsp amchur powder
- 1/2 tsp cumin powder
- Salt to taste
- 1 tbsp finely chopped coriander
Recipe Details :
✓ Take wheat Flour and a pinch of salt in a mixing bowl. keep adding warm water little by little (for soft paratha) and keep kneading the mix to make a soft dough. Cover the dough and keep it for 15-20 mins
✓ Now we'll start making the stuffing. Take a pan, add some oil to it. When the oil is hot put some cumin seeds, chopped green chilly, and the finely chopped onions. Fry them until onion turn soft. Now add salt, cumin powder, red chilli powder, chat Masala, Garam Masala, amchur powder and give it a good Stir. To this Mix add boiled and smashed potato, again mix it nicely so that the Masala is mixed well with smashed potato. Now add some chopped coriander to it and stuffing masala is ready.
✓ it's time to prepare the paratha. Make medium sized 4-6 dough balls from the above prepared dough.
✓ take a roll pin, roll the dough uniformly to make a 3-4 inch circle, apply some ghee on top covering the circle fully and put 2-3 tbsps stuffings on it
✓ now take the edges and start joining all the pleates and bring them to center.
✓ Now sprinkle some flour and again roll the Paratha to the same size as normal roti/Paratha
✓ On gas put a Tawa and make it hot (real hot, not less or medium) , place the above made stuffed dough on Tawa, and let the base be cooked half.
✓ Now flip the Paratha, and apply little oil on the half-cooked side. Turn the Paratha again and repeat the same process for both the side. After applying oil, keep the Paratha on gas for 2-3 mins more until it starts becoming brown. And a well-made Paratha will puff-up
✓ Serve hot with thick curd and pickle of your choice.
