Makhana Kheer

Makhana or Foxnut is Lotus Seeds which is made edible after being processed and highly Nutritious. They are used in many sweet dishes and savories.

Makhana has great health benefits. They are rich in proteins and good carbohydrates. They have anti-ageing and anti-inflammatory properties. They are gluten-free, high in magnesium, which makes them good for heart patients. Makhana is rich in iron, which helps in formation of hemoglobin in the blood.

Since Navratri is here and many of us are going to have the fast, we may get bored of having regular Fasting/Vrat food. On the other note, our body needs some protein as well while we do rely on carbohydrates mostly during fasting. To give a different experience to the fasting, we can go for "Makhana Kheer" loaded with richness of Milk and Nuts. It's lip-smacking and helps the body to get all the required nutrients. On a regular day too, "Makhna Kheer" makes a delicious dessert and a perfect baby food loaded with all natural nutrients.

✓ Heat 1 tbsp ghee in a kadai. Roast the Makhana for 2-3 mins till they turn light golden in color. It'll make the Makhana Crunchy and aromatic.

✓ Let it cool down and grind coarsely.

✓ Heat the rest of the ghee in the same kadai. Put the dry fruits to it. Roast for few seconds and take out in a plate.

✓ In the same kadai, add milk. Add safrron strands.

✓ Once the milk comes to boil, add the coarsely grinded Makhana to it. Cook milk and makahana together in medium flame till it becomes thick. Keep stirring in between.
