Chicken Pulao in Pressure Cooker

Everyone of you must be working from home now-a-days!! 

How Difficult it is to manage the Lunch when you are occupied in continuous meetings and calls!!
 

No time to Cook Chicken and Rice separately. This "One Pot Meal" comes to the rescue...

Today from my kitchen the recipe is "Chicken Pulao", prepared in pressure cooker.. 


It's perfect for a busy day meal and can be cooked within minutes. No need of any side dish...



 Ingredients :
  • 250gm Boneless Chicken - Cut into pieces (you can take regular chicken also) 
  • 1 cup Rice  
  • 1.5 cup Water 
  • 2 Onion - Sliced 
  • 1 tbsp Ginger Garlic Paste 
  • 2 Tomatoes - Chopped 
  • 2 tsp Biryani Masala 
  • 1 tsp Red Chilly Powder 
  • 1/2 tsp Turmeric Powder 
  • 1 tsp Pepper Powder 
  • Salt 
  • 3 tbsp Refined Oil 
  • Some Cashew and Raisins (Optional) 
  • Juice of half lemon 
  • 1 tbsp Ghee

Dry Spices :

  • Around 4-5 Cloves 
  • 3 Cardamom 
  • 1 inch Cinnamon Sticks 
  • 1 Full Star Anise 
  • 10-12 Peppercorn 
  • 1 tsp Cumin Seeds 
  • 2 Bay Leaves 
  • Few pieces of Mace

Recipe Details : 

✓ Heat Oil in a Pressure Cooker.

✓ All all the dry spices and fry them for few seconds till the aroma of spices starts coming.



✓ Add Onion and Ginger Garlic Paste. Mix and cook for around 3-5 mins.


✓ Add the chicken pieces to cooker along with 1 tsp Salt. Stir it. Cover the lid without whistle and cook for around 5 mins in medium flame till the chicken is almost 60% cooked.

  ✓ Open the lid and add Tomatoes to the Cooker.  Cover the cooker again and cook for around 3 mins till Tomato becomes soft.


✓ Add red chilly powder, turmeric powder and Pepper Powder to the cooker. Mix well. Cover and Cook for another 2-3 mins in low flame. 

Add the cashew and raisins and cook for a minute.

 ✓ Meanwhile Wash the rice well. Soak it in water and keep for around 10-15 mins.


✓ After 5 mins, open the cooker lid. Drain the water from rice and add the soaked rice to cooker. 

✓ Mix everything nicely. Add Biryani Masala and give it a stir. Cover the lid and cook for a minute in low flame.


✓ Open the lid, stir again. Add water to the cooker now. Add salt as per the taste.

✓ Keep the Cooker in high flame and let the water comes to boil.  


✓ Add lemon juice at this stage. This will help to keep the rice grains separate and intact. Stir everything again and Close the lid along with whistle.

✓ Cook the pressure cooker for 2 whistles in high flame and then 1 whistle in low flame.

✓ Turn off the flame and wait till the cooker cools down completely.

✓ Open the lid and leave the Cooker aside without lid for 2 mins. Using a fork mix the rice randomly so that the steam inside will go out and rice won't be saggy.

✓ Easy and quick Chicken Pulao is ready to serve hot along with raita.
