Crispy Puffed Rice Fritters | Murmura Pakoda

Evening snacks in the mid of a busy work-day is a real tension. Isn't it ? The craving needs something really quick to prepare with less ingredients. I had a similar situation one fine Evening and I rushed to kitchen with "Puffed Rice" or ମୁଢୀ in my mind(always readily available in every Odia kitchen). Quite often,  Masala Mudhi is our ready-to-go snacks and this time the craving was to have some fried snacks along with a cup of hot Ginger Tea. There are some colorful vegetables too in my fridge.

Why not mix both and prepare this hot, crispy, crunchy snacks to satiate the evening hunger!!!

These fritters are prepared in a different way with a Chinese twist.

"Crispy Puffed Rice Fritters" in today's recipe from Panda's Kitchen.

Ingredients :

  • 1 cup Puffed Rice 
  • 1/4 cup Grated or finely chopped Cabbage
  • 1/4 cup finely chopped Onion
  •  1 Capsicum - finely chopped 
  • 4-5 Beans - finely chopped 
  • 1 Carrot - Grated/finely chopped 
  • 2 tbsp Peas 
  • 2 tbsp Sweetcorn 
  • 1 tbsp Ginger Garlic Paste 
  • 2 tsp Tomato Ketchup 
  • 2 tsp Soya Sauce 
  • 2 tsp Red Chilli Sauce 
  • 1 tsp Schezwan Sauce 
  • Salt 
  • 1 tsp Black Pepper Powder 
  • A pinch of Baking Soda 
  • 2 tbsp each of Besan, Maida, Rice flour and Cornflour 
  • Oil to deep fry the fritters

Recipe Details :

✓ Take all the ingredients to a bowl. 


 ✓ Using hands, Mix and mash everything really well to form a well-mixed thick dough. Don't add water as the vegetables mixing with salt, releases water.


✓ Heat Oil in a dip bottom kadai.

✓ Once the oil is hot, Take small amount of the above mix and shape it in the form you like (may it be regular pakoda/nuggets/fingers/balls). Drop it in the hot oil. Do the same for the complete mixture. 


✓ Fry in medium flame till they turn golden brown in color. 


✓ Take out from oil and transfer to a tissue paper to absorb the excess Oil.

✓ Serve hot as tea-time snacks along with the choice of your sauce.
