Spinach Rice | Palak Pulao in Pressure Cooker

One-pot meal, as the name defines, requires only one pot to cook. It is often one of the favorite choice of many, and why not!! With minimum kitchen time and minimal clean-up, we have many ingredients rolled up to one simple yet delicious dish.

In winter as the days become shorter, we get less active time to wrap up our work. In that, kitchen time becomes even less. One-pot meal is the perfect solution 😉

Winter brings a whole lot of greens with its amazing nutritional value called as "Winter Greens", one of them is Spinach/palak. Spinach being one of the richest in cartenoids,
contains essential vitamins like A, B, C, E, K, zinc, magnesium and large amounts of iron that is necessary for the red blood cells in the body. Needless to say, the benefits of spinach in our diet.

Today's recipe from Panda's Kitchen is a winter special healthy one-pot meal "Spinach Rice/Palak Pulao" in pressure cooker.


 
Ingredients :

  • 1 cup Basmati rice (around 200gm) - soaked for around 20 mins in water and drained 
  • 1.5 cups Water  
  • 250 gm Chopped Spinach 
  • 1 Big Onion - thinly sliced 
  • 2 Green Chilly - slit 
  • 1 tsp Ginger Ginger Paste (you can also use coarsely grounded ginger and garlic) 
  • Chopped Coriander Leaves 
  • 8-10 Cashews  
  • 1 Bayleaf  
  • 3 cloves  
  • 1 Cinnamon Stick  
  • 3 cardamom 
  • 1 star Anise  
  • 1/2 tsp Peppercorns 
  • 1 tbsp Olive Oil (optional) 
  • 1 tbsp Ghee 
  • Salt 
  • 1/2 tsp Pepper Powder

Recipe Details :

✓ In a pressure Cooker, heat oil and Ghee. Add cashews. Saute for few secs and take them out.  


 ✓ In the same pressure cooker, add Bayleaf, cloves, cardamom, Cinnamon Stick, peppercorn, star Anise and Cumin. Saute for few secs till the aroma starts coming.

✓ Add onion, green chilly and ginger garlic paste.


✓  Mix well and fry till Onion turns light brown in color.

✓ Add chopped spinach now to cooker. Mix well and cook till spinach turns saggy.


✓ Add peas and fry for around 2 mins in medium flame. Keep stirring in between. If you are using frozen peas, frying for just a minute would be enough. 


✓ Add soaked and drained Basmati rice to pressure cooker. Fry carefully for 1-2 mins.
 

✓ Add some chopped coriander leaves. Mix well.

✓ Now add water and keep the gas flame high. Let water comes to boil. 


✓ Add salt and pepper powder. Mix everything well. Cover the cooker and Cook the rice in high flame till 2 whistles.

✓ Switch off the flame and wait till all gas comes out.

✓ Open the cover. Add fried cashews and Mix gently.


✓ You can also add some fried paneer pieces and your choice of vegetables.

✓ Serve hot with Raita/any gravy of your choice.
