Cornflakes Veggies Poha

Breakfast is one of the most important meal in a day. Amidst the busy morning schedule, we tend to skip the breakfast most of the time or end up with something unhealthy. Breakfast time comes after 9-10 hours of gap, when the body needs to refuel. So a healthy breakfast is necessary to keep it going all the day long.

There's a notion that healthy breakfasts are boring and one common traditional idea that comes to the mind is "a bowl of cornflakes with milk". Are you bored of having this and a packet of cornflakes is still lying unused from days??? How about mix it with some veggies and make it more healthier 😉 Winter is all about veggies and Winter morning demands some hot quick breakfast.

Try out today's recipe from Panda's Kitchen "Cornflakes Veggies Poha".

 

 Ingredients :

  • 1 cup Cornflakes 
  • 1 cup finely Chopped Veggies - take veggies of your choice like potato, capsicum, carrot, cauliflower, Green peas etc 
  • 1 Onion - finely chopped 
  • 2 Green Chillies - finely chopped 
  • 1 tbsp Roasted Peanuts 
  • 1/2 tsp Mustard seeds 
  • 1 twig Curry leaves 
  • 1/2 tsp Turmeric Powder 
  • Salt as per taste 
  • Juice of half Lemon 
  • 1 tbsp Olive Oil/Mustard Oil

Recipe Details :

✓ Heat Oil in a pan. Add mustard seeds, curry leaves, green chilies and onion to it. Saute and fry them for 2-3 mins.

✓ Now add all the chopped veggies to it. Saute it.


✓ Add salt and turmeric powder. Mix them well.

✓ Add 1 cup water to the pan and let it come to boil. Now keeping the heat low, cover and cook for 5 mins till the veggies are completely cooked. 


 ✓ Once vegetables are cooked, add cornflakes. Mix well and cook for 2 more mins.


 ✓ Add fried peanuts, some chopped coriander leaves and
juice of lemon to the kadai.
Give everything a good mix.

✓ Cornflakes Veggies Poha is ready to serve hot.
