Orange Peel Chatpata Chutney

Which is your favorite all-season fruit? By any chance, is that Orange? Mine too..!!
Along with the Delicious taste, Orange has Vitamin C and it makes the skin glow.

But do you know, the orange peel provides more health benefits than the orange? It has flavonoids, that helps to fight with cancer and heart diseases. It contains hesperidin, that maintains blood pressure and cholesterol. Orange peel cures asthma, hangover and prevents allergies.
 
But I know, now you think of the bitter taste of orange peel and about to toss them into the bin.. Hold back..!!! Check out my today's recipe to make the most of leftover peel..😉

"Orange Peel Chatpata Chutney" from Panda's Kitchen.


Ingredients :

  • Peel of 2 Fresh Oranges - washed well 
  • 1 cup Water 
  • 1/2 cup Tamarind Juice 
  • 1/4 cup Sugar/Jaggery Powder 
  • 1/2 tsp salt 
  • 1 tsp Red Chilly Powder 
  • 1 tsp Roasted Cumin Powder

For Seasoning :

  • 2 tsp Mustard Oil 
  • A pinch of hing 
  • 2 Red Chilly 
  • 1/4 tsp Mustard Seeds 
  • 1 tsp Urad Dal 
  • 1 tsp Chana Dal 
  • 8-10 Curry Leaves

Recipe Details :

✓ Cut the orange peels in very small parts.


 ✓ In a pan boil 1 cup water. Add the orange peel pieces. Cover and cook for around 5-7 mins. 


 ✓ To this add the Tamarind Juice, salt and sugar. Mix everything well and cook for 1-2 mins till sugar dissolves in water.


✓ Add red chilly powder, roasted cumin powder. Give a good stir.


✓ Now it's seasoning time. Heat 2 tsp oil in a wok. Add the ingredients under seasoning and let it splutter.


✓ Add to the orange peel mixture. Mix nicely. Cook for around 2-3 mins more.

✓ For best taste, keep it like this for around 5-6 hours so that the orange peel will soak the water and the bitterness will go.


✓ Serve as a side dish with rice or Chapathi. This can be stored for almost 2 weeks in fridge.

Tips: It doesn't absorb much water, so use water carefully.
For better taste, use fresh orange feel.
If you feel it becomes too watery, use cornflour slurry to balance the water.
If you don't like too much of orange peel taste, throw the water after boiling the peels in the first step and use only the half cooked peels  for next steps.
