Who doesn't know about this delicious flavorful iconic dish of Mumbai. One of my personal favorite street food is "Pavbhaji". While passing through the street foods corner, the name plate of a stall saying "Mumbai Pav Bhaji" and the irresistible aroma coming out of it, never fails to stop me. This dish serves the purpose of every meal, may it be the breakfast, lunch, snacks or dinner.
Pav (Bread) tossed in butter along with piping hot Bhaji (veggies of your choice cooked with some spices and mashed) served with a dollop of Butter, lemon juice and raw onion, makes a wholesome satisfying meal. A varieties of Pavbhaji is prepared using different ingredients, like vegetables of your choice, mushroom, paneer, cheese etc but I personally like the plain Pavbhaji without any extra addition.
The advantages of making pavbhaji at home is, we can always use the fresh veggies of our choice. It's hygienic and no need to use any food color. The Butter amount can also be adjusted as per need and any variety we wish can be made within minutes. It's a good way to make kids eat veggies. Try out the Pavbhaji recipe and never get bored of this Mouthwatering street food.
Ingredients :
- 1 tbsp Butter
- 2 Green Chilli - finely chopped
- 1 Onion - finely chopped
- 1 tsp Ginger Garlic Paste
- 3 Tomatoes - finely chopped
- 1 capsicum - finely chopped
- 1/4 cup Peas (I have used frozen peas)
- 3 Big potatoes
- 2 Carrots
- 1 tsp Red Chilly Powder
- 1/4 tsp Turmeric Powder
- Salt
- 1 tbsp Pav Bhaji Masala ( I usually use Eastern/Everest/MDH brand)
- 1 tsp Coriander Leaves - finely chopped
- 1 tsp Fenugreek Leaves
- 1 Lemon
- 1 cup Water
- 2 Pavbhaji Breads
Recipe Details :
✓ Take the potato and carrot in a pressure cooker along with some water and salt. Cook till 3 whistles in high flame.
✓ Heat 1/2 tbsp butter in a kadai.
✓ Add green chilly, Chopped Onion and ginger garlic paste. Cook for 2-3 mins until the raw smell is gone.
✓ Add tomatoes and cook till it becomes soft and mushy.
✓ Add capsicum, peas, boiled potatoes and carrots.
✓ Add salt, red Chilly Powder, turmeric powder, pav bhaji masala, Coriander Leaves. Mix and cook for 2 mins.
✓ Add 1 cup water. Cover and cook for 10 mins.
✓ Mash to get a smooth texture. Add some Fenugreek leaves, stir and mix again.
✓ Add water and keep mashing. Adjust the consistency here as Needed. The bhaji is ready.
✓ Heat rest 1/2 tsp butter on a tawa. Add some coriander leaves, mix it. Split the pavbhaji bread and toast both the sides.
✓ Serve hot on a plate along with lemon, chopped onion and a dollop of butter.
✓ Tips: The bhaji can be prepared at once and kept in fridge for 3-4 days. Heat it with some masala and 1/2 cup of water every time you want to have and serve hot with butter tossed pavbhaji.
Veggies like cauliflower, beans, beet, paneer or mushroom also can be used while preparing the bhaji.
Add grated cheese while serving if it's allowed in your diet.
