Recipe Details :

✓ Let's start with the Chicken Marination process. Take the chicken and potatoes in a bowl. Add 1 tsp salt, 1 tsp red chilly powder, 1/2  tsp Turmeric Powder and 1 tsp Oil. Mix well and keep aside, covered for around 30 mins.

✓ Heat 2-3 tbsp oil in a kadai. Once the oil is hot, Add Bayleaf, cardamom, Cloves and cinnamon stick. Mix and saute for few seconds.

✓ Add the sliced onions and cook for 1-2 mins in medium flame until Onion becomes light brown.

✓ Add ginger garlic paste. Mix and cook for 2-3 mins more.

✓ Add Tomatoes. Cover and cook for around 3 mins in low medium flame till tomatoes become soft and mushy.

✓ Add salt as per taste (note that we have already Marinated the chicken with salt), red chilly powder, turmeric powder, Cumin Powder ans sugar. Mix well. Add 3 tbsp water and cook for around 5 mins in low flame.

✓ Add the Marinated chicken and potato now. Mix everything, cover and cook in medium flame for 5 mins.

✓ Stir again, cover and cook. Repeat the same process for around 10 mins, i.e. cook in low medium flame for around 10 mins by stirring in between.

✓ Cook the Chicken like this till it starts turning light brown in color.

✓ Add 1/4 cup water, mix and cook again for 5 more mins.

✓ Now add curd and sugar. Mix and cook for around 10 mins.

✓ Add half cup water, let it come to boil. Then keep the flame low and cook for around 10 mins more till the gravy becomes thick and dark brown in color.

✓ Add Chicken Masala and Fenugreek leaves.  Give it a good stir and switch off the flame.

✓ Adjust the gravy consistency and salt here however you need. Chicken Kosha is ready now.

✓ Serve hot with any varieties or rice or roti. My personal favorite is along with steam rice or Luchi.
