Rohu Fish in Mustard Gravy | Rohi Macha Besara

Odia Cuisines play a major role in Culinary World. It has a distinct varieties which has developed over time influenced by local culture and agriculture. 

When it comes about fish, we love to experiment. We can't stop trying it in every different way possible. 


"Macha Besara" is a very famous Odia recipe, prepared in mustard paste. 
It's my Personal Favorite Fish Cuisine. Give it a try and let me know your feedback in Comments.


Ingredients :
Marination :

  • 500 gm Rohu Cut Fish Pieces 
  • 1/2 tsp Turmeric Powder 
  • 1 tsp Red Chilly Powder 
  • Salt as per taste 
  • 1/2 Lemon Juice
Mustard Paste :
  • 2 tsp mustard seeds 
  • 1 tsp cumin seeds 
  • 1 tsp white mustard seeds (optional) 
  • 2 Green Chilly 
  • 7-8 Garlic Cloves 
  • 1 big Tomato - Chopped 
  • 5 tbsp Water
Gravy :
  • 1/2 tsp Cumin Seeds 
  • 1/2 tsp Mustard Seeds 
  • 2 Dry Red Chilly 
  • 1 Big Onion - Chopped/Sliced 
  • 1/2 tsp Turmeric Powder 
  • 1 tsp Red Chilly Powder 
  • Chopped Coriander Leaves (optional) 
  • 1.5 Cup Water 
  • Salt 
  • 1 Big Ambula/Sun Dried Mango 
  • 6-8 Urad Dal Lentils - Dry Roasted 
  • Mustard Oil

Recipe Details :

✓ Take the fish pieces on a plate. Add all the ingredients mentioned under marination to fish and mix well. Coat the fish nicely and keep  for 15-20 mins.
 


✓ Heat Mustard Oil in a Kadai. Once the oil is hot, add the fish pieces to it and fry in medium flame until both the sides are cooked nicely. Take out from flame and place aside.
 


✓ Blend all the ingredients mentioned under "Mustard Paste" and make a smooth paste of it.
 

✓ On the above Kadai where fish was fried, add 2 tbsp oil. Once the oil is hot, add Mustard seeds, cumin seeds, dry Chilly. Fry for 1 min, let the seeds splutter.
 

✓ Add onion to the Kadai. Fry it until the Onion turns golden brown in color.
 

 
✓ Add turmeric powder and red chilly powder and stir well. Add some water to avoid the masala from being burnt.  At this step, you can add the chopped coriander leaves to the gravy. Cook it in low flame until the Masala releases oil.
 

 

✓ Now add the mustard paste to kadai, don't Cook after adding mustard paste, the gravy might turn bitter. Just Mix everything well once and add water to the Kadai.
 

✓ Add salt and cook in high flame. Let the water come to boil. 


✓ Add Sun Dried Mango to the Kadai and cook in low flame for 2-3 mins.
 

✓ The gravy will be thickened up now. Add the fried fish pieces and roasted lentils at this step and switch off the flame. Don't Cook after adding fish.
 

✓ Cover and keep for 5-10 mins to let the fish fry soak the gravy and come in a delicious Mouth-watering taste.


✓ Macha Besara is ready. Serve hot with Hot piping Steam Rice. You don't need anything extra with it
