Eggless No Rum Plum Cake

Christmas is here and I believe every Festival celebration is all about having delicious food 

When the word Christmas is uttered, for a foodie the first expression is "ahh!! Plum Cake Time" πŸ˜‰
So, Panda ran into the kitchen to bake this Christmas Special in an easy way!!!


Now the confusion is, whether to make it a eggy cake or Vegan oneπŸ€”
Why not make it egg-less and without rum so that everyone can bake the recipe and make their Christmas a special one with this super-easy, soft, fluffy, dry-fruits loaded, home-baked Plum cake.


Ingredients :
  • 2 tbsp Black Raisins 
  • 2 tbsp Broken Cashew 
  • 2 tbsp Tutty Fruity 
  • 2 tbsp cut dates 
  • 2 tbsp cut Red Cherry 
  • 2 tbsp Broken Almonds 
  • 2 tbsp Raisins 
  • Fruit Juice
  • Around 8-10 tbsp Sugar 
  • 1 cup Milk 
  • 1/2 Cup Oil/Melted Butter 
  • 1/4 tsp Cinnamon Powder 
  • Few Drops of Vanilla Essence 
  • 2.5 Cups Maida/All Purpose Flour 
  • A pinch of salt 
  • 1.5 tbsp Baking Powder 
  • 1/4 tsp Baking Soda 
  • 1/4 Cup Cocoa Powder 
  • 1/2 cup Powdered Sugar 
  • 2 tsp Vinegar

 Recipe Details :

✓ Take all the Dry Fruits together in a bowl and soak them all in fruits juice for around 3 hours. Let the syrup get soaked.
 

✓ Cook the sugar dry in a pan until it melts and starts caramelizing. Once the sugar is caramelized, add a little hot water to make a sugar syrup and keep it aside.

✓ In a blender take the milk. Add Oil, cinnamon powder, Vanilla essence and
caramelized sugar syrup. Blend them all nicely.


✓ In another bowl, add Maida, powdered sugar, Cocoa Powder, Baking Powder, Baking Soda, salt. Mix all these dry ingredients well and sieve it all to the above bowl where the milk mixture is there.



✓ Mix Gently by cut and fold method to make a soft smooth batter. Add the  to it and mix again very nicely and gently.

✓ To this, add the soaked dry fruits and mix again well.
 
 

✓ Add the vinegar and mix again to make a semi-liquid batter.

✓ Grease the cake tin with oil/butter and transfer the mixture to the tin. Dab it to make the base plain and synchronous.

✓ Add some dry fruits, cherry and choco chips on the top again.


✓ Meanwhile, preheat the Oven at 170°C. Once the temperature is maintained, transfer the cake tin with batter into oven.


✓ Bake the cake for around 30 mins at 170°C.

✓ After 30 mins, take the tin out and check with the help of a toothpick if the cake is properly baked and the toothpick is coming out clean.

✓ If needed, it can be baked for 10 mins more.

✓ Soft Fluffy Tasty dry-fruits overloaded plum cake is ready to grab.
