Onion is like the basic ingredients required in almost all recipes, specially when it comes to preparing any Non-Veg dish, onion is a must.
But Onion prices started climbing this year which soon became a matter of national importance as prices touched new record highs, as 200/kg and it's not even available in many vegetable shops 😭
The jump in onion prices is the real test time. I believe the same situation is there at almost every places in India.
I used my skills to prepare chicken in a way without using onion and surprisingly, it came out super-tasty.
Today I am going to share the recipe with all of you. Please try at your home, but don't forget to give comments. 😉
Ingredients :
✓ Wash the chicken well, marinate it with salt, turmeric powder, red chilli powder and 1 tsp mustard Oil. Mix all of them well using hand and keep aside for 20-30 mins
✓ Let's prepare the masala meanwhile. In a Kadai, heat 1 tsp oil. Add cashew and watermelon seeds, fry for 1-2 mins until it becomes light brown. Add tomato and cook for few more mins until tomato becomes soft and mushy. Switch off the flame and let it cool down.
✓ In a blender, take Ginger Garlic Paste and the the mix fried in step 2. Blend it well to make a smooth paste.
✓ In the Same kadai, take 2 tsp oil. After the oil is hot, add the marinated chicken pieces to it. Fry them for few mins till the chicken starts turning light brown in color. Take out in a bowl.
✓ Again pour 2 tbsp oil to the Kadai. Add Cumin seeds and 1 bayleaf (break into 2 pcs). Fry it until Cumin seeds start spluttering.
✓ Now add the blended paste to the kadai and mix well. Cook it for 5 mins.
✓ Add turmeric powder, Chilly Powder, salt to it. Mix well and cook for 5 mins more. You can add 2 tbsp water if the masala becomes too dry.
✓ Add chicken masala to it and stir again. Cook the masala in low flame for 5 more mins. Again 2-3 tbsp water can be added to the Masala.
✓ After 5 mins, add the milk fat/cream to the gravy and mix again nicely in low flame. Cook it again only for 10-15 sec.
✓ Now add the stir fried chicken to Kadai and mix very well with the gravy. Cook for 5 mins.
✓ Add 1 cup water (based on your gravy need, I don't like it with too watery gravy). Raise the flame and heat water until water starts boiling. Once water starts boiling, make the flame low, Cover the chicken with lid and let it cook for 10 more mins in low flame. This will make the chicken soak the gravy nicely and taste super delicious.
✓ Open the lid, stir the chicken once again. Add the Kasuri Meethi here and stir again to mix well.
✓ You can adjust the gravy consistency here as per need. If you like little thicker, cook for 1-2 mins more.
✓ Take out the kadai from gas and serve the chicken hot along with steam rice. Chicken without onion is ready. You can add 1/2 tsp Cream again to Garnish it.
