I usually prepare this recipe when I want to eat something delish on a Veggie Day or Want to impress my Mom with a Chatpata Veg Recipe.
Presenting for all of you, hot and delicious today's Lunch Special recipe "Doi Potol" or "Dahi Parwal", Pointed Gourds cooked in Curd gravy!!
Ingredients :
- 8 Full and side slitted Pointed Gourd
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp green chilly paste
- 2 tbsp poppy seeds paste
- 2 small onions paste
- 1/4tsp cumin seeds
- 1-2 bay leaves
- 1 small Tomato - Chopped
- 1/4 cup whisked curd mix with 1/4tsp sugar
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp cumin powder
- 1 cup water
- 1/2 tsp Garam Masala Powder
- Salt
- Around 3 tbsp Mustard oil
Recipe Details :
✓ Take all the pointed Gourd, wash them well and just slit them with the root intact.
✓ Mix well with salt and Red-Chilly powder.
✓ Take a Kadai on gas with 2 tbsp of mustard oil in it. Once the oil is hot, Shallow fry the pointed Gourd pieces.
✓ Fry until they turn golden brown and take out in a plate.
✓ In the same pan, with the remaining oil (if needed add extra), add cumin seeds and Bay leaves. Let them fry for 5-10 secs.
✓ To this add all of the above pastes one by one and fry them well In low frame. Keep stirring and frying them until the oil separates.
✓ Now add 1 small chopped tomatoes and cook again for 2-3 mins until tomatoes are cooked well and smashed.
✓ Add salt as per taste, red chilli powder, turmeric powder, cumin powder and cook a last time until oil separates.
✓ Cover the pan and cook in low flame until Pointed Gourd is cooked well.
✓ Adjust the gravy as per your need, add Garam Masala powder at the end, mix well and take out of gas.
✓ Doi Potol/Dahi Potala/Curd Parwal is ready. Serve hot with steam rice/roti.
